Cheesy Quick Bread

I was looking for a quick and easy bread to make with soup. I wanted something I could whip up in a bowl without having to get out the mixer. This recipe sounded promising and it was good, but it needed something.


I mixed the flour, (which next time I would use whole wheat flour, we were out)sugar, baking powder and salt.

an egg, milk and vegetable oil

I made two small loaves instead of one large loaf.

They baked at 400 for about half an hour.

Cheesy Quick Bread
1 3/4 cups all-purpose flour
1/4 cup white sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup shredded Cheddar cheese
1 egg
3/4 cup milk
1/3 cup vegetable oil

Mix flour, sugar, baking powder, salt and cheese. Add egg, milk and oil and stir until just moistened. Pour batter into greased pan.
Bake in 400 oven for 30-35 minutes.

It was pretty good, but I think using whole wheat flour or even half and half would just add more texture and/or flavor. You might even think about decreasing the oil...it seemed like a lot.

  1. It looks yummy! Whenever I make something using cheese, I use the sharpest cheese possible or it just comes out tasting, well, kind of blah. Also, do you think subbing a good olive oil for the veg oil would add some flavor? Thanks for posting this, it's going into "the files". :)
