The reviews of my chicken were pitiful. I was told "Well, it tasted like chicken." So I won't bore you with the details until I perfect it. I'll just bore you with the pasta.
I started with a few diced tomatoes.
I sauteed it in a pan with a little olive oil and fresh garlic.
I had a little pesto left in a jar, so I put two huge spoonfuls in, along with salt and fresh ground pepper.
Boil tri colored tortellini.
I simmered the sauce down to reduce the chunkiness.
Then I poured the sauce over the tortellini and generously topped with fresh parmesan cheese.
My sad little chicken...
I served the pasta with roasted veggies, baby bleu salad and the chicken. This meal was a hit. There were elements of each dish that my boys enjoyed.
quick tomato sauce
8 medium tomatoes, diced
4 cloves garlic, minced
1 Tbl olive oil
1/4 Cup pesto sauce
salt and pepper to taste
Saute tomatoes and garlic in olive oil. Add pesto, salt and pepper. Simmer for 5-10 minutes. Pour over tortellini (or anything) add fresh grated parmesan cheese.
The pasta and the salad looks delicious! The chicken, was it a frozen breaded patty?
ReplyDeleteNo, it was a boneless skinless chicken breast that I dipped in eggwash and then dredged in a seasoned flour and parmesan cheese mixture, then baked.
ReplyDeleteEveryone said they were good, but not seasoned well enough. I think next time I might use more spices and cheese, and less or no flour.
Actually, I used homemade panko now that I think about it. I used the flour method a different day.
