Okay, I'll be honest. I've gained 4lbs since I started this.
That is not good.
I keep trying to make the food more interesting, which then means more...more food, more oil, more cheese, just more. Plus I have a ferocious desire to make treats. Unfortunately this is not out of the ordinary...its just the way I am.
Anyway, umm...here is a treat I made a few weeks ago for a friend who had surgery. Don't worry I kept half of it for myself (hence the 4lbs). This is a classic recipe...I'm sure the Cheerio people made it up...it certainly wasn't me.
The stuff...plain cheerios, butter, brown sugar, dark corn syrup, almonds and pecans...although you could probably use any nut...
Did I mention how healthy this is?? :)
I always toast my nuts. With this keep in mind that you're going to bake it again, so lightly toast the pecans and almonds.
Melt the butter in a pan and then add the corn syrup.
Add the brown sugar into the pan.
Stir the mixture until the sugar dissolves into the butter.
Add the toasted nuts and the plain cheerios into a large bowl and pour syrup mixture over the top and stir.
Pour cereal on to a prepared cookie sheet and throw into a 325 oven.
Get a bunch of parchment paper ready.
Immediately pour cereal on to parchment and spread it out to let it cool.
Try not to steal a handful, because it's not the perfect mix of chewy, crunchy sweet deliciousness.
Store in a zip lock or something cute and frilly if you're giving it as a gift.
Nutty O’s
1 C. brown sugar
1 C. dark corn syrup
½ C. butter
12 C. cheerios
1 C. pecans, toasted
1 C. almonds, toasted
In sauce pan heat sugar, syrup and butter until dissolved. Stir in cereal and nuts.
Spread on greased cookie sheet and bake at 325 for 15 minutes.
Cool on wax paper, because it will stick to the cookie sheet!
